Zinfandel

Bright and full-bodied, this Zinfandel wine is a curious contradiction in tastes.

Olive oil to brush the grill
6 slices sharp cheddar cheese
6 onion buns,split
6 thin slices red onion
1 1/2 cups favorite cole slaw recipe

Instructions

Preheat grill to a medium-high heat. To prepare the bbq sauce:heat the olive oil in a medium fireproof skillet on the grill. Add the onions and saute 5 minutes. Add the garlic and saute 1 minute longer. In a small bowl, whisk together the chilli sauce, worcestershire sauce, dry mustard, vinegar, brown sugar, and chilli powder. Add this to the onions and simmer 10 minutes stirring constantly. Set aside 1/4 cup to cool to add to the patties and another 1/4 cup to top burgers with when assembling. Remove sauce from heat and use this for basting later. To make the patties, crumble ground chuck in a large bowl. Add the salt, pepper, garlic,BBQ seasoning, and onions. Add the 1/4 cup of cooled bbq sauce and mix well, handling the meat as little as possible. Divide the mixture into 6 equal portions and form the patties to fit the buns. When grill is ready, brush the grill rack with olive oil. Place patties on the grill and baste with bbq sauce. Cover and cook turning once. Cook 5-7 minutes on each side,to reach internal temp of 160 degrees. Baste with the bbq sauce when turning the patties. Add cheese slices to patties the last minute of grilling. Cover to melt. Remove patties to a platter. Grill buns open side down for 30 seconds. To assemble the burgers, place bottom of bun on the serving plate. Add the onion slice, patty, 1- 1 1/2 tablespoons cole slaw, and spread bbq sauce onto top of bun lid. Add the bun top and serve. Makes 6 burgers.
