Garlic Lovers Bruschetta Burger

Ingredients

Bruschetta topping-
4 vine ripened tomatoes
3 cloves of garlic
8 fresh basil leaves (2 Tbs)
1 tsp dried oregano
4 Tbsp extra virgin olive oil
½ tsp salt
½ tsp pepper
Burger-
4 cloves of garlic (minced)
7 fresh basil leaves
(2 Tbs) 1 lb ground beef (sirloin)
1 tsp salt ½ tsp pepper
4 Tbsp extra virgin olive oil
-Extra virgin olive oil to brush grill –
Fresh ball of mozzarella cheese cut into ¼ inch slices -Store bought rosemary olive oil

Instructions

Directions- Start by making the Bruschetta topping so it can sit for 30 minutes before serving. Dice tomatoes into small pieces, mince garlic, and finely chop basil. Combine diced tomatoes, minced garlic, cut basil, oregano, extra virgin olive oil, salt and pepper. Let topping sit for about 30 minutes before serving. Preheat a gas grill till it is at a medium high level, or prepare a medium hot charcoal grill. To make the burger, mince the garlic and basil and combine with beef, salt, pepper and extra virgin olive oil. Divide meat into quarters, and shape into large round patties. (Handle as little as possible.) When the grill is hot, brush it with olive oil. Grill burgers for 4-5 minutes then flip, and cook for about 4-5 more minutes for a medium burger, or until preferred doneness. Slice focaccia bread in half (horizontally) then into quarters so that there are four sets of bread for the burgers. Toast the focaccia on the grill with insides toward the flame, to warm through, about 3 minutes. Cut mozzarella cheese in ¼ inch round slices and put on burgers in the last 1-2 minutes of cooking. To assemble burgers, remove focaccia bread from grill and place on plates. Put a bed of bruschetta on the bottom layer, and then remove the burger from the grill and place on top of bruschetta. Put another layer of bruschetta on top of burger, and then the focaccia lid and serve.
