Gem Dandy Burger with Feta Infused Spread and Fresh Vegetable Confetti

Ingredients

BURGER
1 pound beef (ground chuck is preferred)
1/4 c. minced onion
3 Tbls all purpose greek seasoning
1 1/2 Tbls finely processed bread crumbs
SPREAD
1/3 c. sour cream
2 teas. prepared horseradish
2 teas. capers
1/3 c. crumbled Feta cheese
salt/pepper to taste
VEGETABLE CONFETTI
1 small purple onion
1 yellow pepper
1 jalepeno pepper
1 small tomato
1/4 c. fresh mint
1/4 c. lime juice
1/2 c. chopped watermelon

 

Instructions

BURGER
Mix together careful not to overwork, 1/4 c minced onion, greek seasoning, and finely processed bread crumbs with 1 pound of beef product. Form into even size patties. This mixture should make approximately 6 patties. Cook until medium-well ( approximately 6-8 minutes per side).
SPREAD
For spread, mix together listed ingredients. I prefer Daisy Brand sour cream! Spread evenly on slightly toasted buns (top and bottom)
VEGETABLE CONFETTI
Carefully chop 1 small purple onion, 1 yellow pepper, 1 small tomato, and 1 jalepeno seeded. Add 1/4 c. finely chopped fresh mint, 1/4 c. fresh lime juice and 1/2 c. chopped and seeded watermelon. Mix together well.

To plate, place burger on lightly toasted bun with spread on top and bottom. Add dollop of vegetable confetti.
