Ginger – Garlic Asian Burgers

Hard to pronounce yet easy to drink, this wine combines lychee fruit and white peach flavors with a hint of spice.

Ingredients

Sweet and Spicy Soy Marinade
2 tablespoons minced fresh ginger
1 tablespoon minced fresh garlic
1/2 cup dark soy sauce
1/4 cup Gewurztraminer
1/2 cup firmly packed brown sugar
1/4 teaspoon cayenne pepper
6 chopped green onions
Patties
1/4 cup dark soy sauce
1/4 cup Gewurztraminer
1/4 cup firmly packed brown sugar
1/4 cup fresh minced garlic
1/4 cup fresh minced ginger
1 1/2 pounds ground chuck
1 1/2 pounds ground round
2 teaspoons sea salt
About 2 tablespoons roasted white sesame seeds
Vegetable oil, for brushing on grill rack
6 sesame seed buns, split

 

Instructions

– To make the marinade, combine ginger, garlic, soy sauce, wine, brown sugar, cayenne, and green onions in a small bowl, wisk to blend well. Separate marinade into 2 equal portions, reserving 1 portion for basting the patties and the other portion to be used as the condiment. – Prepare a medium hot fire in a charcoal grill with a cover, or preheat a gas grill to medium high. – To make patties, combine soy sauce, wine, brown sugar, galic, and ginger in a bowl and wisk to blend well. Crumble ground chuck and ground round in a large bowl. Pour soy sauce, wine, brown sugar, garlic, ginger mixture evenly over ground meat. Sprinkle sea salt evenly over mixture. Handling the meat as little as possible to avoid compacting it, mix well. Divide the mixture into 6 equal portions and form the portions into patties to fit the buns. Sprinkle the patties lightly with sesame seeds. -When the grill is ready, brush the grill rack with vegetable oil. Place the patties on the rack sesame seed side down, sprinkle the other side lightly with sesame seeds, cover, and cook, turning once, until the patties are done to preference, 5 – 7 minutes on each side for medium. Brush the patties frequently with marinade. During the last few minutes of cooking, place the buns, cut side down, on the outer edges of the rack to toast lightly. – To assemble the burgers, brush the toasted side of the buns with the reserved marinade to be used as a condiment. On each bun bottom place a patty. Add the bun tops and serve. Makes 6 burgers.
