Ginger Spiced Burger with Grilled Sweet Potato, Goat Cheese and Caramelized Onions with Thyme.

Ingredients

Caramelized Onions with Thyme
2 tablespoons butter
1 large Vidalia onion, halved and thinly sliced
1 teaspoon fresh thyme
Grilled Sweet Potato
1 medium sweet potato, sliced into 6 half-inch slices
2 tablespoons olive oil
½ teaspoon salt
Patties
2 pounds ground chuck
2 cloves garlic, minced
2 tablespoons chopped scallions
1 tablespoon chopped fresh ginger
2 small red hot chili peppers, chopped and seeded
1-teaspoon salt
½ teaspoon freshly ground black pepper
Vegetable oil, for brushing on the grill rack
Six half-inch thick slices goat cheese
6 onion bulky rolls, split
Olive oil to brush on rolls

 

Instructions

Directions Preheat gas grill to medium-high heat. To make the caramelized onions, melt butter in a 10-inch non-stick, fireproof skillet. When melted, add onions and thyme cover with lid and place on grill. Cook the onion mixture for 15-20 minutes, stirring occasionally until the onions are caramelized and most of the liquid is evaporated. Move to cooler area of grill and keep warm. When grill is preheated, brush with oil to prevent sticking. Brush sweet potato slices with olive oil and sprinkle with salt. Grill slices until tender, 2-3 minutes on each side. Move to cooler area of grill and keep warm. To make patties, combine the ground chuck, garlic, scallions, ginger, chili peppers, salt and pepper. Mix meat well, without over mixing. Divide mixture into six equal portions and form into patties to fit rolls. Place patties on the grill, cover and cook turning once, until done to preference, 5 to 7 minutes on each side for medium. During the final few minutes of cooking, brush rolls with olive oil and place cut side down on the grill to toast lightly. To assemble burgers, spread equal amounts of caramelized onions on bottom bun, place burgers on onions, top with sweet potato and goat cheese, add roll tops and serve. Makes 6 burgers.
