Goat-to-Town Burger

Ingredients

2 pounds lean ground beef
1 jar of Onion Relish
1 jar of pepper jelly (as hot or as mild as you like it)
8 Ounces of Goat Cheese
1 teaspoon salt
½ teaspoon red pepper (crushed)
¼ cup melted butter
12 slices grilled Texas toast

 

Instructions

1. In a large bowl combine ground beef, half the onion relish, one fourth of the pepper jelly, 4 ounces of goat cheese, salt and crushed red pepper. Shape mixture into six 1-inch thick patties. 2. On a charcoal grill, grill patties on the rack of an uncovered grill directly over medium coals for 18 to 20 minutes or until done (1600), turning ONLY ONCE halfway through cooking. Let stand for 3 minutes 3. Lightly butter and grill Texas toast on both sides until slightly crispy and grill marks appear. 4. Assemble Goat-to-Town burger as follows. Spread onion relish and pepper jelly (if desired) on Texas toast in a thick layer. Place burger on bread top with crumbled goat cheese and additional relishes if desired. 5. Pair with the Sutter Home White Cabernet Sauvignon for a delicious smooth accompaniment or pair with a chilled Sutter Home White Merlot for a refreshing and more adventurous burger and wine pairing.
