Ingredients

patties
1tablespoon olive oil
2 small shallots chopped
2 cloves of garlic minced
2oz pancetta chopped (as fine as possible)
1lb ground beef
3/4lb ground lamb
1 1/2 teaspoons gound rosemary (fresh if possible)
1 teaspoon kosher salt
1/2 teaspoon fresh ground pepper
small pinch fresh ground nutmeg
1/2 cup merlot divided (1/4 cup set aside)
Reduction 1/4 cup merlot
3oz good quality dark chocolate
vegtable oil to brush grill
6 bun size sections crusty Italian bread sliced horizontaly
1/4 cup olive oil for brushing on bread
6 1/4 inch slices picarino romano cheese

 

Instructions

preheat a gas grill to med -high heat or a charcoal grill to med-hot fire w/cover in a fire safe sautee pan placed on grill add olive oil ,shallots , garlic, and pancetta. sautee until pancetta becomes crispy stirring constantly. Remove from grill set aside. To prepare patties : in a large bowl add groundbeef,lamb,rosemary,salt,pepper,nutmeg, merlot(1/4 cup) and sauteed mixture. Handling the meat as little as possible mix together well set a side for 15 min. Divide the mixture into 6 equal portions and form the portions into patties to fit the bread. Brush the grill rack with oil. place the patties on rack ,cover and grill for about 3 to 4 minutes. Turn the patties and continue cooking for about 5 minutes for med. For the last 5 minutes of grilling return seasoned sauttee pan back to the grill. After the pan begins to sizzle add remaining 1/4 cup merlot(remove from flame when adding merlot then return to grill)and chocolate reduce to about half. Remove burgers from the grill and let rest. Meanwhile brush halves of bread with olive oil and toast on grill rack cut side down, until brown. While burgers are resting place a slice of cheese on each patty. To assemble burgers, on the bottom potion of the bread add patty and drizzle reduction over patties. Add the bread tops and serve.
