Good Neighbor Burgers with English Relish

This rich red easily complements your homemade chicken dishes, red meats, game, and mildly seasoned pastas.

Ingredients

2 pounds ground chuck (20% fat)
1-1/2 teaspoons salt
Several good twists of a pepper mill
6 sesame seed Kaiser or burger rolls, split and lightly toasted
Mayonnaise, Hellmann’s or Best Foods preferred
Iceberg lettuce

English Relish:
7 ounces anchovies, drained and chopped
2 tablespoons fresh white breadcrumbs
5-1/2 ounces butter, room temperature
1/2 teaspoon cayenne pepper
Pinch ground cinnamon
Pinch ground nutmeg
Pinch ground mace
Pinch ground ginger
Pinch freshly ground pepper

 

Instructions

Oil the grill grate well and preheat grill to medium high heat.

Combine ground beef, salt, pepper, and liquid smoke; mix well and form into 6 burgers about as wide as rolls and 3/4-inch thick. Cover and set aside until grill is blazing hot.

In the meantime, in a small food processor, puree the anchovies and butter together until they have formed a smooth paste. Add the breadcrumbs, spices and pepper, and pulse until well mixed. Set aside.

Add burgers to the grill and cook 4 minutes per side, or until medium to medium-rare. Add rolls to grill, cut sides down, and grill 2 minutes until golden and warmed through. Spread mayonnaise sparingly on all cut sides of rolls, add lettuce to bottom half of rolls, then a burger, a spoonful of English relish, sliced onion, and the roll top. Cut in half and serve hot.
