GOTHCHAM BURGERS, MERLOT SAUCE AND GRILLED BUNS WITH HERBS

Ingredients

2lbs of ground chicken
1 medium yellow onion minced
2 cups of sliced mushrooms, minced
1 tablespoon of paprika
one teaspoon of thyme
one tablespoon of tarragon
one cup of Heinz Worcestershire
2 tablespoons of extra virgin olive oil
3 tablespoons of vegetable oil for greasing grill rack
1/4 cup of Sutter home merlot
2 cups of Heinz chili sauce
4 tablespoons of honey
1 cup of cilantro, finely chopped
1 cup of parsley, finely chopped
6 hamburger buns
6 slices of provolone cheese

 

Instructions

Pre-heat grill to medium high.
To prepare merlot sauce;
Stir together in non-stick pan the 1/4 cup of merlot, chili sauce and 2 tablespoons honey. Heat for about ten minutes until thickened or until desired consistency
Burger preparation:
Sautee onions and mushrooms in 2 tablespoons of olive until tender (about 10 minutes)
In separate bowl, combine chicken, paprika, thyme, tarragon and Worcestershire sauce. Add the sautéed mixture. With hands gently incorporate all ingredients until thoroughly mixed. Form mixture into 6 equal sized patties and place onto plastic cutting board. Round edges gently with hand to form nice circular shape. Transfer burgers to grill using a spatula. Grill burgers for 6-8 minutes on each side, with cover closed. Turn burgers only once. During last 2 minutes add provolone cheese to each burger. Close cover until cheese melts
Buns
Using index finger coat top of buns with the remainder of honey. Sprinkle parsley and cilantro on tops until well covered. Grill top side down for 2 minutes, grill bottoms down also for 2 minutes.
To assemble burgers:
Place burgers onto bottom buns, top with lettuce, tomato, red onion and one tablespoon of merlot sauce. Place herb coated tops on to burger, enjoy
