Grandma Nancy’s Cheese Stuffed Swedish Meat Ball Burgers

Along with many other Minnesotans, my family emigrated from Scandinavia in the late 1800’s.They brought their culinary traditions with them and then altered their recipes to use locally available and affordable ingredients. Ground beef was most affordable and allowed a family to feed many people on a budget. Every Sunday during my youth, entire extended family would gather at my Grandparents’ home for Sunday dinner. My grandmother made meatballs and chicken for most Sunday afternoon family dinners. During the summer months, Sunday dinners became picnics in the back yard or at the lake. Grandma would serve hamburgers using her meatball recipe and potato salad to our extended family. A taste of Lingonberries and Jarlsberg Cheese add a true Scandinavian flair to this delicious burger.

Ingredients:

Beef Patties
2 pounds of lean ground beef
1/2 cup finely crushed bread crumbs
2 eggs
¼ cup finely diced yellow onion
2 table spoons milk
2 teaspoon salt
1 teaspoon fresh cracked pepper
Sauce
1 tablespoon butter
½ cup Lingonberry Jam
2 tablespoons balsamic vinegar
2 tablespoons finely diced onion
1 garlic clove finely diced
½ teaspoon fresh cracked pepper
½ teaspoon salt
1 tablespoon honey mustard
Buns
6 fresh white hamburger buns
3 tablespoons butter softened
1 tablespoon honey mustard

Instructions:

Mix all beef patty ingredients in a large bowl until fully combined
Form 12 thin patties
Cut Jarlsburg Cheese into 6-1 inch cubes(to stuff in the burger) and 6- ¼ inch thick slices(to top burger)
Place one cheese cube in the center of each of 6 beef patties
Top each beef and cheese patty with another beef patty
Press to seal the edges of each burger
In a grill safe sauce pan, sauté onion and garlic in butter
When onions and garlic are translucent, add all other sauce ingredients and simmer until mixture becomes thick and bubbly. Approx. 10 minutes
Set sauce aside-keep warm
Grill burgers over medium heat for 15 minutes or until medium well
Top each burger with 1 teaspoon of sauce
Place one slice of cheese on each burger
Top each burger with ½ teaspoon of sauce
Grill until cheese melts (3 to 5 minutes)
Split each bun in half
Mix softened butter and honey mustard
Spread butter mustard mixture over the inside of the top and bottom portions of each bun
Grill the insides of each bun until toasted (1to3 minutes)
Serve burgers on toasted buns
