GRANDMA’S ITIALIAN SUNDAY BURGERS

Ingredients

Cheesy topping
1 teaspoon-Freshly ground black pepper
.25 teaspoon-Salt
1 teaspoon-Chopped fresh oregano
3 tablespoons-Grated parmesan cheese
1 teaspoon-Chopped fresh basil 13 tablespoons-Ricotta cheese Tomato sauce
1 teaspoon-Freshly ground black pepper
.25 teaspoon-Salt
1 tablespoon-Sutter Home Zinfandel
1 teaspoon-Chopped fresh oregano
1 teaspoon-Grated parmesan cheese
1 teaspoon-Chopped fresh basil
2 teaspoons-Sugar
3 tablespoons-Tomato paste
Garlic bread
1 teaspoon-Freshly ground black pepper
1 teaspoon-Finely chopped fresh Oregano
2 teaspoons-Grated parmesan cheese
1 teaspoon-Finely chopped fresh basil
9 cloves-Finely chopped garlic
9 tablespoons-Colavita extra virgin olive oil
Patties
2 pounds-Freshly ground chuck
2 teaspoons-Freshly ground black pepper
2 teaspoons-Salt
1 teaspoon-Chopped fresh oregano
2 teaspoon-Grated parmesan cheese
1 teaspoon-Chopped fresh Basil
2 cloves-Finely chopped garlic
1-Egg
1-Finely chopped white onion
Colavita extra virgin olive oil, for brushing the grill rack
18 slices of sandwich style Pepperoni
6 Italian Kaiser sandwich rolls with sesame seeds, split

 

Instructions

Preheat a gas grill to medium-high. To make the Cheesy topping, combine all of the ingredients in a large bowl. Mix well. Set aside. (May be made ahead, covered, and chilled until ready to use.) To make the tomato sauce, combine all of the ingredients in a large fireproof non-stick skillet and mix well. Cook on the grill for 9 minutes while constantly stirring. Set aside. To prepare the garlic bread, combine all of the ingredients in a large bowl. Mix well. After the bread has been split use a brush to equally distribute the mixture from the bowl onto the halves. Set aside. To make the patties, combine all of the ingredients in a large bowl. Mix well. Divide the mixture into 6 equal portions. Form the portions to be about the same diameter of the bread. Set aside. Brush the grill rack with Colavita extra virgin olive oil. Place the patties on the rack, cover, and cook about 3 minutes. Turn the patties. Layer each with 3 slices of Pepperoni. Put equal portions of the tomato sauce on top of each pattie, cover, and cook about 6 minutes. During the last minute of cooking, place the garlic bread, cut side down, on the outer edges of the rack to toast evenly and lightly. To assemble the burgers, on each bun bottom, place a pattie. Layer each pattie with equal portions of the Cheesy topping. Add the bread tops and serve. Makes 6 burgers
