Greek Burgers with Feta Aioli and Hummus
Simple….I love Greek food! There are so many flavors and textures in Greek cuisine. I tried to incorporate all those flavors into one delectable burger. This burger is very moist and is bursting with flavor. So delicious!
Ingredients:
Feta aioli:
½ cup crumbled feta cheese
2 Tablespoon mayonnaise
2 ½ Tablespoon plain greek yogurt
1 clove garlic, minced
¼ teaspoon salt
¼ teaspoon pepper
Hummus:
1 15 oz cans chickpeas
1 teaspoon fresh lemon juice
2 Tablespoon chopped flat leaf parsley
2 clove garlic, minced
½ teaspoon salt
1 teaspoon tahini
½ teaspoon ground cumin
¼ teaspoon black pepper
¼ cup olive oil
Herb mix:
1 cup finely chopped cilantro
¼ cup finely chopped mint
8 large basil leaves, finely chopped
1 clove garlic, minced
2 Tablespoons olive oil
Patties:
¼ cup + 2 Tablespoons herb mix
2 lbs. ground beef
½ teaspoon marjoram
1 teaspoon Thyme
1 teaspoon Onion powder
½ cup panko
1 teaspoon salt
½ teaspoon pepper
6 onion buns
6 slices tomato
6 sliced red onion [presumably “sliced” is a typo and “slices” was intended / Jill]
6 romaine lettuce leaves
Instructions:
Feta aioli:
Mix feta cheese, mayonnaise, yogurt, garlic, salt and pepper in a shallow bowl. When mixed well, cover and chill until ready to use.
Hummus:
Drain and rinse chickpeas. Put chickpeas, lemon juice, parsley, garlic, salt, tahini, cumin, and black pepper in a blender or food processor and blend till smooth. Slowly add in olive oil and mix until blended. Set aside.
Herb mix:
Place cilantro, mint, basil leaves, garlic, and olive oil in a food processor. Mix well and set aside.
Patties:
-Prepare medium-hot coals in a charcoal or gas grill.
Mix herb mix(already made in bowl and set aside), ground beef, marjoram, thyme, onion powder, panko, salt, and pepper. When mixed, form into 6 equal patties.
Place patties on grill and cook burgers about 5-6 minutes per side. Get buns ready. Place upper and lower buns, cut sides facing down, on the outer edges of the grill rack until lightly toasted.
To assemble burgers, put 2 Tablespoons of hummus on bottom bun. Place patty on the hummus, then 1 heaping Tb. of the feta aioli. Top with red onion slice, tomato slice and romaine lettuce. Serve and enjoy!
