spinach-1 bag
garlic-3 cloves
sutter home zinfandel(not white-reg Zin)
1lb beef
1lb veal
1 egg
feta cheese
kalamatta olives
grated fontinia cheese
olive oil
4 tablespoons pesto sauce
1 pepperonchini
greek salad dressing
ciabatta bread
basil leaves



combine spinach, shallots, garlic in saute pan till they soften add the 1/3 cup of zinfandel and 1/4 cup greek dressing let burn off a few minutes, drain on paper towel, set aside in bowl combine beef and veal,shallot mixture, feta cheese about 1/2 cup and 1/2 cup of shredded fontinia, add 1/3 cup kalamatta olives,1/4 cup sutter hom zinfandel,egg,2tsp olive oil make into patties, then grill on chiabbatta bread spread greek salad dressing on toasted side about tablespoon, add pesto and spread on bread place basilleaves and serve
