Green Chilli Tortilla Burgers with Abobo Crema

1lb Ground Beef
2 tbs Mexican Oregano
1tbs Amber beer 
2 tsp Salt
Dash Pepper
2 Med. Hatch Chili Peppers
1/2 bottle Amber beer
 4 tbsp Sour Cream
1 tsp sauce from Chipotle in Adobo
1 tsp lime juice
4 thick slices Colby Jack Cheese
4 Flour Tortillas



Mix Ground Beef with 2 tbs beer, oregano and salt and pepper. Form into 4 1/4 lb burgers and refrigerate. Roast the Chili Peppers on med. hot grill until all sides charred. Cover and set aside to cool 15 mins. Peel off skin and remove seeds, cut into small dice. In a small sauce pan (on side if hot grill) add beer and chili’s and let simmer 20-30 minutes. Mix sour cream, adobo sauce and lime juice in a small bowl and refrigerate. While Chili’s simmer in beer and sauce refrigerates grill burgers 3-4 mins per side until Medium. After flipping first time add Cheese to melt. Place flour tortillas on hot grill for 15 seconds to warm up. Place burger in center of tortilla and add 1tbs of chilies and 1tbs of sour cream chipotle sauce. Wrap and serve.
