Grilled Cabernet Burgers with Spicy Avocado Dressing

Ingredients

Spicy Avocado Dressing
1 Ripe California Avocado
1/4 Cup Sour Cream
1 Tbsp. Lemon Juice
1/2 Tsp. Hot Pepper Sauce
1/2 Small Tomato, Diced
1 Tbsp. Chopped Fresh Cilantro
Grilled Cabernet Burgers
1 lb. Ground Chuck
3/4 Cup Sutter Home Cabernet Sauvignon
1/2 Cup Crushed Pretzels
1/2 Cup Crushed kettle cooked Potato Chips
1/2 Cup Chopped Fresh Onion
1 Tbsp. Grey Poupon Dijon Mustard
1 1/2 Tsp. Colavita Extra Virgin Olive Oil
2 Large Eggs Lightly Beaten
1/3 Cup Tomato Paste with Basil, Garlic and Oregano
Vegetable Oil for Brushing the Grill Rack
6 Kaiser Rolls Sliced Horizontally

 

Instructions

Prepare a medium-hot fire in charcoal grill with a cover or pre-heat a gas grill to medium-high. Prepare Spicy Avocado Dressing. Slice and scoop out the meat from the avocado. Place the avocado meat in a small mixing bowl and mash with a fork. Stir in sour cream, lemon juice, Tobasco, tomato and cilantro and whisk until well blended. Cover and set aside. To make the burgers, combine the ground chuck, Sutter Home Cabernet Sauvignon, crushed pretzels, crushed potato chips, onion, mustard, olive oil, eggs and tomato paste in a large bowl. Handling the meat as little as possible to avoid compacting it, mix well. Divide the mixture into 6 equal portions and form the portions into patties. When the grill is ready, brush the grill rack with oil. Place the patties on the rack, cover, and cook, turning once, just until done, about 4-minutes on each side for medium-rare. If using a meat thermometer, cook until internal temperature reaches 160 degrees farenheit. During the last few minutes of cooking, carefully place the rolls, cut side down, on the outer edges of the rack to toast lightly. To assemble the burgers, on each bun bottom, place a burger and top with 1 Tbsp. of the Spicy Avocado Dressing, add the bun tops and serve. Makes 6 burgers.
