Grilled Cheese Burgers

Ingredients

1 lb. ground chuck
1 tsp. salt
1/4 tsp. black pepper
8 slices fresh sourdough bread
1/2 cup softened butter
8 slices real american cheese
Sundried tomato salsa
8 sundried tomatoes
4 ripe plum tomatoes
1 medium size red onion
1/8 tsp. salt
1/4 tsp. sugar
2 Tablespoons canola oil

 

Instructions

Sundried tomato salsa
1) Finely chop the sundried tomatoes and place in a medium size bowl. 2) Chop the ripe plum tomatoes, the red onion, and add to the bowl of sundried tomatoes. 3) Add salt and sugar and oil; Toss to blend and set aside.
Burger
1) Place ground chuck in a medium bowl and sprinkle with salt and pepper; Stir to blend spices into meat. Form into 4 oval patties and set aside. 2) Take the slices of bread and spread one side of each slice with the butter. Place butter side down on a griddle over a charcoal fire. Place a slice of cheese on each bread slice and grill until the butter side is golden brown; Remove and set aside. 3) Place burger patties on the charcoal grill and cook until they reach 160 degrees internally. 4) Place each burger on the cheese side of 4 pieces of the grilled bread. Top each with 1/4 cup of the tomato salso, then another piece of grilled bread, cheese side in.
