1 CUP LIGHT BROWN SUGAR
3/4 TEASPOON CAYENNE PEPPER
T TEASPOONS FENNEL SEEDS, CRUSHED
2 CLOVES GARLIC, FINELY MINCED
1 POUND THICK SLICED BACON
FOR GRILLED FENNEL:
1 TEASPOON COLAVITA EXTRA VIRGIN OLIVE OIL
1 BULB FRESH FENNEL, STEMS AND CORE REMOVED, SLICED INTO APPROX. 1" X 3" SLICES
SALT FOR SPRINKLING ON FENNEL
FOR GRILLED ONION AND MANGO:
1/8 CUP COLAVITA EXTRA VIRGIN OLIVE OIL
2 SWEET ONIONS SLICED IN 1/3" SLICES
2 RIPE (BUT FIRM) MANGOS, SEEDED, PEELED AND SLICED INTO 1/2 SLICES S
ALT FOR SPRINKLING ONIONS
FOR SESAME SEED ROLLS:
1/2 CUP COLAVITA EXTRA VIRGIN OLIVE OIL
2 CLOVES GARLIC, FINELY MINCED
6 SESAME SEED BUNS
FOR PATTIES:
1 1/2 POUNDS FRESHLY GROUND TURKEY
1 CUP GRILLED FENNEL, CHOPPED
3/4 CUP SWEET ONION, MINCED
3 TABLESPOONS GREY POUPON COUNTRY MUSTARD
1 1/2 TEASPOONS SALT
1/2 TEASPOON LEMON-PEPPER
4 CLOVES GARLIC, FINELY MINCED
1/3 CUP HONEY BBQ SAUCE
OIL FOR MOISTENING HANDS AND BRUSHING GRILL
8 OZ. SMOKED GOUDA CHEESE

 

Instructions

TO PREPARE BACON, PLACE BROWN SUGAR, PEPPER, FENNEL AND GARLIC ON FLAT PLATE. MIX WELL. CUT EACH SLICE OF BACON IN HALF (ABOUT 4"-5" LONG PER SLICE). DREDGE EACH SLICE IN BROWN SUGAR MIXTURE UNTIL LIGHTLY COATED. PLACE BACON ON VEGETABLE RACK AND PLACE DIRECTLY ON GRILL AT MEDIUM HEAT. GRILL BACON UNTIL CRISP, ADJUSTING HEAT DOWNWARD IF NECESSARY. REMOVE BACON FROM GRILL AND SET ASIDE. TO PREPARE GRILLED FENNEL, RUB OLIVE OIL LIGHTLY ON EACH PIECE AND SALT LIGHTLY. PLACE FENNEL ON VEGETABLE RACK AND PLACE DIRECTLY ON GRILL. COVER AND COOK ON LOW HEAT, TURNING OCCASSIONALLY UNTIL TENDER (ABOUT 15-20 MINUTES) CHOP GRILLED FENNEL. COVER AND SET ASIDE. TO PREPARE GRILLED ONION AND MANGO, LIGHTLY OIL AND SALT ONION SLICES. PLACE ON VEGETABLE RACK AND PLACE DIRECTLY ON GRILL ON MEDIUM HEAT. TOSSING OCCASIONALLY, GRILL ONIONS UNTIL TENDER AND SLIGHTLY BLACKENED, (APPROX 6-8 MINUTES). REMOVE ONIONS, COVER AND SET ASIDE. LIGHTLY OIL MANGO AND PLACE ON VEGETSBLE RACK. PLACE DIRECTLY ON GRILL ON MEDIUM HEAT FOR ABOUT 1 – 1 1/2 MINUTES OR UNTIL WARMED THROUGH, TURNING ONCE. COVER MANGOS AND SET ASIDE. TO PREPARE SESAME ROLLS, PUT OLIVE OIL AND GARLIC IN BLENDER FOR 30 SECONDS TO FLAVOR OIL. SLICE EACH SESAME BUN IN HALF. BRUSH FLAVORED OIL ON EACH CUT SIDE OF BUN. SET ASIDE. TO PREPARE PATTIES, COMBINE TURKEY, CHOPPED FENNEL, ONION, MUSTARD, SALT, LEMON-PEPPER, GARLIC AND BBQ SAUCE, HANDLING MEAT AS LITTLE AS POSSIBLE TO AVOID COMPACTING. DIVIDE TURKEY MIXTURE INTO SIX EQUAL PORTIONS. MOISTEN HANDS WITH OLIVE OIL TO FORM 6 PATTIES. (PATTIES SHOULD BE LARGE ENOUGH TO FIT SESAME BUNS). BRUSH GRILL WITH OIL. GRILL PATTIES ON MED/HIGH FOR APPROX 6 MINUTES. TURN PATTIES AND CONTINUE GRILLING FOR ADDITONAL 6-8 MINUTES OR UNTIL MEAT THERMOMETER READS 170 DEGREES. DURING FINAL MINUTE OF GRILLING, PLACE EQUAL AMOUNTS OF SMOKED GOUDA ATOP EACH PATTIE. PLACE SESAME BUNS, CUT SIDE DOWN ON GRILL TO TOAST, WATCHING CAREFULLY TO AVOID BURNING. WHEN CHEESE IS MELTED AND BUNS ARE TOASTED, REMOVE PATTIES AND BUNS FROM GRILL. TO BUILD BURGERS, PLACE ONE SLICE MANGO ON CUT SIDE OF BOTTOM HALF OF EACH SESAME BUN. PLACE ONE PATTIE ATOP EACH MANGO. PLACE EQUAL PORTIONS OF BACON ATOP BACON (APPROX. 3-4 SLICES PER PATTIE). PLACE EQUAL AMOUNT OF GRILLED ONIONS ATOP BACON.
