Grilled Salmon Burgers
Ingredients
1 lb fresh salmon fillet
1 egg yolk
Colavita Extra Virgin olive oil
fresh dill
juice of 1 lemon
salt, to taste
pepper, to taste
1/4 cup diced red onion
4 potato rolls
Instructions
1. Break up salmon into pieces in a large bowl. Remove and discard skin. 2. In a separate bowl, beat egg yolk with a fork until slightly frothy. Drizzle in 3-4 TB of Colavita olive oil. Add in one bunch of chopped fresh dill,juice from one lemon and salt and pepper to taste. Add in choppd onion and mix into salmon. 3. Form four burgers and place on aluminum foil that has been brushed with olive oil. Lightly brush each burger with olive oil. Place foil on a hot grill. Cook for 2-3 minutes each side. 4. Brush a small amount of olive oil on each bun and lightly toast on the grill. 5. Put salmon burger on the roll and enjoy!
