Grilled Spicy Tuna Burgers with Cool Cucumber Relish

Ingredients

1 1/2 lbs fresh sushi grade tuna, finely ground
1 egg
3/4 cup mayonnaise, divided
1/4 cup for tuna patties & 1/2 cup for relish
3/4 cup panko
3 Tablespoons lemon juice, divided 2 tablespoons for tuna patties & 1 tablespoon for relish
3 teaspoons salt, divided 2 tsp for tuna patties & 1 tsp for relish
1 teapoon Srirachi or other Asian hot chili sauce
1/4 cup RedFish magic
1/2 cucumber, peeled, seeds removed and cut into small cubes
3 tablespoons chives, chopped
1/2 teaspoon black pepper
Vegetable Oil for brushing on the grill rack
Sesame seed hamburger buns, split

 

Instructions

Preheat grill to medium-high. To prepare tuna patties, mix together tuna, egg, mayonnaise, panko, lemon juice, 2 teaspoons salt, and hot chili sauce. Divide into 6 equal portions and form into patties being careful not to overhandle. Season patties with RedFish Magic. To make relish, mix together cucumber, mayonnaise, lemon juice, 1 teaspoon salt, chives and black pepper. Set aside. Once grill is ready, brush grill rack with oil. Place burgers on grill, cover and grill for 4 minutes, turn and cook for an additional 4 minutes or until cooked through. During the last several minutes of cooking place the buns on the grill, cut side down and toast lightly. To assemble the burgers, place burgers on bun bottoms, dress with cucumber relish, add the bun tops and serve.
