Habanera Lime Blue Cheese Burgers


1 avocado
1 lime
2 Tbs. Dijon mustard
1 tsp kosher salt
1 tsp fresh ground black pepper
1 tsp garlic powder
1/2 tsp. ground cumin
2 lbs. Ground sirloin
2 Habanero peppers
1/4 cup Worcestershire sauce
1 lime
1Tbs. Kosher salt
1 tsp fresh ground black pepper
6 ciabatta bread rolls
1/2 cup olive oil
1 large red onion
8 oz. Block of blue cheese



Sauce: Peel and seed 1 avocado and place in a medium size mixing bowl. Add the juice of 1 lime, 2 Tbsp. Dijon mustard, 1 tsp. kosher salt, 1 tsp. Fresh ground pepper, 1 tsp garlic powder, 1/2 tsp ground cumin. Mix thoroughly with a wire whisk until smooth and refrigerate until burgers are ready.

Burgers: Preheat grill to high, 400-450º. Place 2 lbs. Ground sirloin in a large mixing bowl. Seed and finely mince 2 Habanero peppers, add to meat. Add 1/4 cup Worcestershire sauce. Add juice of 1 lime. Add 1 Tbs. Kosher salt. Add 1 tsp. Fresh ground black pepper. Mix thoroughly to ensure Habanero peppers are spread evenly. Form into six patties. Place patties evenly spaced on hot grill.
Turn grill to lowest setting, close lid for approximately 3 minutes. Open lid and turn burgers. Close lid and cook for approximately 5 minutes. While burgers are cooking prep the rolls and toppings.

Split 6 ciabatta bread rolls and place on a baking sheet. Pour 1/2 cup olive oil into a bowl and using a pastry brush spread evenly over split sides of each roll. Slice 1 large red onion into 6 slices. Slice an 8 oz. Block of blue cheese into thin slices.

When burgers are finished, remove from grill onto a platter and tent with aluminum foil to rest while rolls are grilling.

Place rolls, cut side down on grill and turn heat up to highest setting. Leave lid open and watch carefully. Grill until the edges begin to brown, approximately 2 minutes. Remove from grill onto the baking sheet for assembly.

Place the blue cheese slices on the split side of the bottom of the rolls. Add the burgers. Add 1 slice onion. Spread the split side of the top of the rolls with the avocado sauce and top the burgers.
