Habanero burger

I like the challenge of creating new flavors in my cooking

and I am a person who likes some heat in my burgers.I like to bringing together bold flavors to make the perfect burger.

Ingredients:

for the patties

2lbs 80/20 ground chuck

4 habanero peppers grilled and chopped

2 jalapeno peppers grilled and chopped

2 cloves of garlic chopped

2 tsp course sea salt

1 tsp ground black pepper

6 oz shredded sharp cheddar California cheese

12 slices of cooked bacon

For the smoked paprika glaze

1/4 cup colavita extra virgin olive oil

1/4 cup fresh squeezed lemon juice

2 tbsp of a quality paprika

2 1/2 tbsp honey

1 tsp thyme

1 tsp of course sea salt

1/2 tsp of ground black pepper

Avocado lime cream cheese

1 ripe California avocado

8 oz of cream cheese

2 tbsp fresh squeezed lime juice

1 clove garlic

1/2 tsp of fresh cilantro

2 drops tobacco chipoltle pepper sauce

1/2 tsp course sea salt

1/4 tsp course black pepper

6 good quality seeded hamburger buns

6 Romain lettuce leaves

6 thin slices of red onion

6 slices of tomato

Instructions:

Prepare a medium-hot fire in a charcoal grill with a cover or preheat a gas grill to medium-high.

to make the patties take the habanero and jalapeno peppers place on grill and char the peppers .pull off the grill let cool then chop all peppers seeds and all.In a large bowl put the beef ,peppers,garlic,salt and pepper.Handling the meat as little as possible to avoid compacting the meat,mix well.Divide the mixture into 6 equal portions and form to fit the buns.Refrigerate until ready to cook.

for the avocado lime cream cheese.Take the avocado and garlic put in food processor chop until until almost smooth add lime juice,salt,pepper,Tabasco sauce,garlic and cilantro and process to smooth then put in salad bowl and refrigerate until ready to use.

for the glaze in a small bowl combine olive oil, paprika, lemon juice ,honey ,thyme,salt and pepper and mix well.

When the grill is ready brush grill with vegetable oil place the burgers on the grill baste the top of the burgers with the glaze cover and turning once then put the glaze on the top of the burgers when flipped.4-5 minutes per side .with about one minute left of cooking add the cheese to each burger.

to assemble the burgers toast the buns on the grill pull then spread the avocado lime cream cheese on the top and bottom of the buns place one lettuce leaf ,one tomato and onion on the top roll.Place the burgers on the bun add two slices of bacon to each burger and top with the tops of the buns and serve.
