Hamburgesas Feliz (Happy Hamburgers) With Mango-Chipotle Sauce, Jicama and Avocado

Ingredients

Burger Patties:
32 oz. ground beef chuck
1 Tbs. + 1 tsp. chopped fresh oregano
3 Tbs. chopped fresh flat leaf parsley
1/2 c. chopped fresh cilantro
1 Tbs kosher salt
1 1/2 tsp cracked black pepper
1/2 c. salsa verde (canned)
3/4 c. Japanese panko bread crumbs
Mango-Chipotle Sauce:
1/4 c. chopped fresh mango
1/2 c. mango chutney
1/2 Tbs Chipotle in Adobo (sauce only)
1 jicama root – same size diameter as the bun
1 lime
1 Tbs. Colavita Extra Virgin Olive Oil
1/2 tsp kosher salt
3 California Avocados
1/2 tsp. kosher salt
vegetable oil for brushing the grill
2 Tbs. Colavita Blended Olive Oil (for brushing on patties)
6 semi firm hamburger buns
3 –4 Tbs Colavita Extra Virgin Olive Oil

 

Instructions

Directions:

Heat gas grill to medium high temperature.

To make the patties combine the ground beef, oregano, parsley, cilantro, salt, pepper and salsa verde in a large mixing bowl and fold ingredients together. Mix in the bread crumbs. Form mixture into six patties the same diameter as the bun. Cover patties and hold in cool place until needed.

For the Mango-Chipotle Sauce place chopped, fresh mango, mango chutney and adobo sauce in small food processor and process until smooth. Remove and hold covered in cool place.

Peel the jicama root and cut six very thin, 1/8 inch thick slices from the middle of the root so the diameter of the slices is equal to that of the bun. Lay the slices on a large plate or tray and squeeze the lime juice on the slices. Drizzle the Colavita oil on the slices and sprinkle with salt. Rub the juice, oil and salt on both sides of the slices, cover and hold at room temperature.

Peel the avocados, remove the pits, place in mixing bowl, sprinkle with salt and mix together with a fork breaking the avocado to resemble a chunky guacamole. Cover and hold at room temperature.

Brush vegetable oil on grill grates.

Unwrap the burger patties, brush with the 2 Tbs Colavita blended olive oil and place on grill. Grill on one side for 3-4 minutes before turning. Grill on second side for 3-4 minutes for a medium doneness. Remove patties. During the last minute of grilling the burgers split the buns, brush cut side with the Colavita Extra Virgin Olive Oil (not all oil may be used), place cut side down on cooler part of grill and toast until light brown.

To build the burgers spread equal amounts of the avocado mixture evenly on bottom half of buns. Place a patty over the avocado mixture, spread equal amounts of the Mango-Chipotle sauce over patties, top each with a marinated jicama slice and place top of buns on and serve.
