Hamburguesa Poblana

You won’t need a bouquet of flowers when you share our Pinot Grigio. This crisp wine with floral aromas is a wonderful way to make an entrance.

Ingredients:

BURGER INGREDIENTS:
1 large poblano pepper
1/2 small white onion
1 tsp chopped garlic
7oz uncooked Mexican style chorizo
1 1/2 lbs ground pork
3/4 lbs ground chuck(beef)
1 egg
1 1/2 tsp ground cumin
1 tsp kosher salt
1/2 tsp course pepper
2 tps dried parsley
6 sices monterrey jack cheese
6 kaiser rolls
SALSA TOPPING INGREDIENTS:
1/2 white onion
2 ripe tomatoes
2 green tomatillos
1 jalapeno pepper
2 ripe hass avocadoes
1/2 cup chopped fresh cilantro
1 lime
1 tsp kosher salt
1 tsp coarse pepper

Instructions:

Turn gas grill on high. Roast poblano pepper by setting it on the grill on direct flame, turning it untll the skin is black and bubbling all aroung the pepper. Remove pepper from
grill and place in a plastic bag for 5 minutes. In the mind time finely chop the onion. Take pepper out of bag and peel off the skin. Remove the seed and chop pepper. Using a cast iron skillet on top of grill, cook the chorizo for 3 minutes and then add the chopped poblano pepper, onion and garlic, cooking all ingredients together for another 5 minutes.
Remove skiller from grill and place a small bowl to allow to cool down.
In a large bowl, mix ground pork, beef, cumin, salt, pepper, parsley and egg. Add cooked chorizo, poblano pepper, onion and garlic and mix all together.
Form 6 patties and cook on grill on low/med heat until done.
While burgers are on the grill, chop all of the SALSA ingredients and put them in a medium bowl. Make sure to take seed and veins out of the jalapeno pepper. Add the salt and pepper as well as the juice of the lime. Mix all ingredietn gently so that you don’t mash the avocadoes too much.
When burgers are almost ready, place a slice of cheese on top or each burger and let it melt. Warm kaiser rolls on the top rack of grill for a few minutes.
To plate the burger, place the bottom side of Kaiser roll on the a plate, and spread a table spoon of SALSA on it, then top with burger and more SALSA on top of the burger, finish by topping with kaiser roll.
