1 Teaspoon salt flakes (preferably a smoky sea salt)
1/4 Cup spicy grainy mustard
2 Tablespoon extra virgin olive oil
2 Large red onion, sliced 1/8″
1/4 Cup worcestershire sauce
12 Thick slabs/slices peppered bacon
6 Thick slabs of sharp cheddar 3/8″ thick
2 Large ripe avocados sliced into 18+ slices cut 1/8″ thick
12 Slices of a large ripe tomato, cut 1/8″ thick
12 Large leaves of green leaf lettuce
1/4 Cup mayonnaise
6 Brioche buns
Instructions
Patties:
1. Heat a skillet to high heat add mushrooms and 1/4 Cup of butter stir for 4-5 minutes, add Malbec stir for another 3-4 minutes to reduce, add juice of the lemon, add garlic, stir to combine and remove from heat.
Spread mushrooms onto a plate to cool and save skillet, as is, for onions.
2. Once cooled mix the mushrooms into the beef (don’t over work) and divide into 6 equal portions and form into 5 inch patties
3. Sprinkle pepper equally over the patties and flip
4. Sprinkle patties with the salt and slather each equally with the grainy mustard
5. Cover burgers and set aside at room temperature for 20-30 minutes prior to grilling
Onions:
1. Heat that empty mushroom skillet to medium-high, add the oil and separated onion pieces and saute 5-7 minuets to carnalize
2. Add 1/8 Cup of the worcestershire sauce and continue to stir to reduce liquids then set aside for burger assembly.
Bacon:
1. Prepare a gas grill by preheating to high for 5+ minutes
2. Lower grill to medium and place a griddle (or sheet pan) over heat with a grate (in the sheet pan or griddle)
3. Place bacon onto grate/sheet pan, adjust heat to around 400 degrees and cook for 10 min covered
4. Flip bacon and cook for another 10-15 minutes to desired doneness… should be just crispy… watch for flareups!
5. Cooking time will be dependent on thickness of your bacon and temp of your grill
6. Pull bacon off and place between layers of paper towels to soak up some bacon fat
Cooking & Assembly:
2. Adjust grill to medium and wipe with olive oil
3. Place 6 burgers (mustard side down) on the grill, drizzle remaining worcestershire over burgers and cook for 5 minutes
4. Flip burgers, divide and spread equal portions of sauteed onions on burgers
5. Place cheese slices over the onions
6. Cover grill and finish cooking for 5-7 minutes for medium rare (still a bit reddish for me)
7. Remove burgers and loosely cover while preparing burger assembly
8. Evenly spread the mayonnaise to the insides of the buns and grill for 1-2 minutes (low/medium heat)
9. Plate buns, place lettuce onto bottom bun, then burger, 3 slices of avocado, 2 tomato slices, those 2 slabs of bacon (ok to have those sticking out some) and cover with top bun to serve
