Havana Breeze Burger

Mojo Sauce:
10 cloves garlic
1 medium onion, chopped
2 tsp ground cumin
1/2 cup cilantro, hand torn
1 lime, zested and juice
1 cup Colavita extra-virgin olive oil
1/4 cup water
2lbs ground chuck
1/4 cup green olives with stuff garlic, chopped
2 T Worcestershire sauce
1 T paprika
1 T chipotle hot sauce
3 T Mojo sauce, prepared above
1 tsp kosher salt
1/2 tsp fresh ground pepper
Vegetable oil, for brushing the grill rack
6 deli slices of havarti cheese
6 Kaiser buns, split



Directions: Preheat your gas grill to high To make the Mojo sauce, put the garlic, onion, cumin, cilantro, lime zest and juice into a food processor. Turn processor on and stream in the 1 cup of Colavita extra-virgin olive oil and the 1/4 cup of water. Turn off processor and reserve. To make the patties, combine the ground chuck, the chopped green olives with stuff garlic, Worcestershire, paprika, chipotle hot sauce, Mojo sauce, salt, and ground pepper. Mix together using your hands. Divide the mixed ground chuck into 6 equal parts and form into patties. Brush the grill rack with oil. Place the patties on the grill, cover and grill for 5 minutes. Turn the patties and continue grilling for another 5 minutes. During the last few minutes of cooking, place the split Kaiser buns on the grill and toast lightly and place a slice of havarti cheese on each patty. To assemble the burger, slather the top of the toasted bun with Mojo sauce and place the burger on the bottom bun. Close the bun and serve. Makes 6 burger.
