Hawaiian Chicken Burgers with Mango Salsa

Pairs well with:

White Zinfandel

With strawberry and melon essences, this American original is perfectly at home with however you like to unwind.

I live in Southern Florida and there is an abundance of tropical fruit here. I am always dreaming up new combos to use this beautiful bounty.
This is both waist friendly and delish.

Ingredients:

Mango Salsa:
2 mangos, peeled and diced (about 1 1/2 cups)
3/4 cup papaya, diced
3/4 cup pineapple, diced
1/2 cup red onion, diced
1/2 cup sweet red pepper,diced
2 jalepenos, seeds removed and diced
3 tablespoons fresh squeezed lime juice
small bunch cilantro, about 3 tablespoons , chopped

Burger part:
1 1/2 pounds ground chicken
2 tablespoons teriyacki sauce (Kona pineapple teriyaki)
1 tablespoons garlic from jar
3 large scallions, chopped
1 tablespoons sesame oil
1 tablespoons rice vnegar
1 teaspoon sriracha hot sauce
1/2 teaspoon ground ginger

Rolls:
6 kaiser rolls

Toppings:
12 tablespoons mayonnaise
Mango Salsa
6 lettuce leaves

Instructions:

In a bowl combine all the salsa ingredients.
Cover and chill while you make the burgers and cook them.
In a large bowl combine all the burger ingredients.
Form into 6 patties.
Slpit the Kaiser rolls in half lengthwise.
Pre heat the grill to med high.
Grill the burgers until they reach an internal temp of 160°
The last few minutes of cooking toast the cut sides of the Kaiser rolls.
Spread 2 tablespoons of mayonnaise on the top and botttom buns, top with a burger, mango salsa, and lettuce.
