Shredded Sharp Cheddar Cheese
Combine in a blender the mushrooms, garlic, salt, cayenne pepper, black pepper, and onion. Puree until rough paste.
SautÃ© paste with red wine until well cooked and once again to a thick paste.
In the blender, puree the fat off of several piece of bacon.
Add cooked paste and the bacon fat to ground chuck and mix by hand until well incorporated.
Grill burgers until done.
Combine cream cheese, shredded sharp cheddar cheese, milk, black pepper, salt, and garlic in a sauce pan and melt together slowly while constantly stirring.
Spread Texas Toast with butter and sprinkle with garlic. Toast the bread evenly on the grill.
Fry remaining bacon until crisp. Place sauce on bottom piece of bread, place meat on top of sauce, place crispy bacon, lettuce, and tomato on top of meat. Cover with more cheese sauce and top wth second piece of bread.
Recommend serving with lots of napkins.
