Hearty Wine Burgers
1lb mushrooms (morel, shitake, portabello, crimini, etc)
4 tbsp butter
3 cloves garlic
2 cups demiglaze
2 cups Sutter Home Cabernet or Zinfindel
2 lbs ground chuck (85%lean)
Melt butter in heavy skillet clean and rough chop mushrooms chop garlicand onion add all to butter and brown lightly remove and reserve add wine to deglaze pan add demiglaze and stir to blend bring to boil lower heat and reduce to medium thick sauce consistency cool to room temperature add 1/2 of sauce to ground chuck salt and pepper to taste grill on medium hot and cook to desired doneness. after flipping, use reserved sauce to glaze the burger, turning once more to glaze both sides rewarm mushroom mixture and top burgers with mixture along with any remaining sauce drizzled on top.
