Hey Mon!, Jerk my Burger!!Mojo marinated burger with jerk mayonnaise, grilled pineapple and Swiss cheese on a toasted Kaiser roll

. For the patties

Zest of 1 large lime

1 teaspoon fresh ground pepper

2 ½ pounds of ground chuck – 80/20

1 teaspoons coarse sea salt

1 cup Mojo marinade

For the Pineapple

1 ripe golden pineapple

For the Jerk Mayonnaise

1 tablespoon Jerk Seasoning

¾ cup mayonnaise

Other Ingredients

6 slices Swiss Cheese sliced about 1/8 inch thick

1 Red onion, sliced into thin slices

3 Roma Tomatoes Cored and sliced lengthwise

1 head crisp Leaf Lettuce, cleaned and separated

6 fresh Kaiser Rolls

¼ cup Grape seed Oil

4 tablespoons unsalted butter – room temperature



For the patties

In a large bowl combine the Mojo marinade lime zest, sea salt, and pepper. Mix well. Add the ground chuck and mix gently, but incorporate all the seasonings. Shape into 6 equal patties. Cover and refrigerate.

For the Pineapple

Cut the top and bottom off and core the pineapple. Slice into rings about ¼ inch thick.

Lightly brush with grapeseed oil and grill until lightly toasted, flip over and repeat until golden brown. Cover and keep warm.

For the Jerk Mayonnaise

Place the mayonnaise and jerk rub in a bowl and mix well. Cover and refrigerate

To Cook

Brush the burgers with a light coating of grapseed oil, and over a medium hot grill cook the burgers for 4 minutes on one side. Gently turn over and cook for another 3 minutes or until an instant read thermometer reads 130 degrees. Add the slices of Swiss cheese and when melted, remove, cover lightly with foil and let rest for 2 – 3 minutes. While the burgers are resting, brush the split rolls with the butter and quickly toast. Cover and keep warm

To assemble the burgers

On the toasted rolls, generously coat both sides with the Jerk mayonnaise. Place a leaf of lettuce on the bun bottom and place two slices of tomato on the lettuce then place the

cooked burger on the tomato and the grilled pineapple on top of the burger. Add slices of red onion and another leaf of lettuce and cover with the bun top and enjoy!
