Hidden Treasure Burger

Ingredients

2 Tbsp canola oil
1 cup frozen hash browns
2 Tbsp olive oil
1 yellow onion, skinned and thinly sliced
1 roasted red pepper, drained and sliced
1/2 tsp salt
1/2 tsp pepper
2 lbs ground beef
1/2 tsp black pepper
1/4 tsp chili powder
4 Tbsp A-1 steak sauce
3/4 c. grated swiss cheese
3/4 c. grated medium cheddar cheese
6 potato rolls

 

Instructions

Place skillet over medium to medium high heat. Pour in canola oil. When oil is hot hot, add frozen hash browns in a single layer. Cook for 5 minutes and then flip. Cook for another 5 minutes or until crispy and brown. Set potatoes aside. Place another skillet over medium low to medium heat. Add olive oil. When the skillet is warm, add onion and roasted red pepper. Season with salt and pepper. Cook gently until soft and almost caramelized, about 15 minutes. Set onion and pepper mixture aside. Take ground beef and season with pepper, chili powder, and steak sauce. Divide the beef into 6 balls for patties. Take the first ball and divide it in half. Flatten the one half into a patty and then layer 1/6 of the swiss cheese, hash browns and cheddar cheese on top of the patty. Take the other half of the ball of beef and cover the top of the patty so the cheese and potatoes are hidden inside. Continue to do the same thing with the other 5 balls of meat. Now grill the patties on a medium hot grill for 5 minutes on one side and then flip and grill another 4 minutes on the other side or until desired doneness. When burgers are done serve on a potato roll topped with 1/6 of the onion and pepper mixture. Enjoy!
