Hole in One Burgers with Clubhouse Relish & Smoked Cheddar

Inspired by a California cousin who loves golf, corn and burgers; and my passion for New York bagels.Every year I prepare jars of corn relish, to top our burgers

Ingredients:

1/2 cup unsalted butter, softened
2 tablespoons Tabasco Garlic Pepper Sauce
6 onion bagels, split (fresh bakery bagels)
2 ears corn, 1 layer outer leaves removed, soaked in water 10 -20 minutes
2 teaspoons light brown sugar
1 small Persian cucumber, or medium unwaxed Kirby
3-4 firm tomatillos (6 ounces total)
1/2 medium red onion, finely chopped
1/4 cup drained pickled jalapenos, chopped
1/4 cup drained garlic-stuffed olives, chopped
1 tablespoon apple cider vinegar
1 tablespoon extra virgin olive oil
2-1/2 tablespoons Diamond Crystal Kosher salt, divided use
1-1/4 teaspoons freshly ground pepper, divided use
2 pounds ground beef chuck, 80-82% lean
2 teaspoons ground cumin
2 teaspoons sweet paprika
1/4 cup grated red onion
1 teaspoon garlic paste
2 teaspoons Tabasco Original Cayenne Pepper Sauce
6 large butter lettuce leaves
8 ounces smoked Cheddar, sliced thinly
6 cherry tomatoes
neutral oil for oiling grid

Instructions:

Prepare a gas grill for direct medium-hot heat . Melt butter and Garlic Pepper Sauce in a small grill-proof saucepan. Brush lightly on cut sides of bagels. Set bagels and remaining butter aside
.
Clubhouse Relish: Drain corn and grill 10-12 minutes, turning occasionally, until husks are lightly charred; remove husk, slice off kernels and add to a bowl. Grill tomatillos until papery husks are char-marked, 3-4 minutes per side. Remove husks from tomatillos, chop finely. Mix with corn, sugar, chopped onion, jalapenos, vinegar, olives, olive oil, 1/2 teaspoon salt, 1/4 teaspoon pepper and set aside.

Patties: Combine beef, cumin, paprika, 1/4 cup grated onion, garlic paste, Tabasco Cayenne Pepper Sauce , 2-3/4 teaspoons salt and 3/4 teaspoon pepper. Handling mixture as little as possible, form six equal patties, 3/4″ thick. Poke a 3/4″ hole with your thumb, in each, just like a bagel. Oil grill grid. Grill patties 4 minutes. Turn, brush cooked side with Garlic Pepper butter . Grill 4-6 minutes longer, or until internal temperature reaches 160-F. Flip, brush again with remaining garlic pepper butter, top with cheese, cover grill and cook 30-60 seconds, to warm cheese. Place bagels, cut side down, on back of grill until warmed through.

Assembly: Fold lettuce on bagel bottoms; add patties, a spoonful of relish, .and close bagels. Insert a tomato in bagel top openings.
