Honey Glazed Bulgogi Burger With Bacon-Mushroom Jam

Ingredients

  • BACON-MUSHROOM JAM:
  • 3 thick cut slices applewood bacon, chopped
  • 8 ounces crimini mushrooms, chopped
  • 1 Cup diced sweet yellow onion
  • 1/2 Cup beef stock
  • 3 tablespoons Mirin
  • 1/4 Cup orange marmalade
  • 1/4 Cup tomato paste
  • 2 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon Thai spicy & sweet chili sauce
  • 1 tablespoon Bacon Chipotle seasoning blend
  • 2 Teaspoons Thai seasoning blend
  • 1 teaspoon liquid smoke
  • QUICK PICKLES:
  • 1 Cup matchstick carrots
  • 1 Cup English cucumber, halved slices
  • 1 jalapeno, sliced into rings
  • 3 tablespoons apple cider vinegar
  • 3 tablespoons sugar
  • 1/2 tablespoon kosher salt
  • 1 teaspoon sesame oil
  • GARLIC-CHILI AIOLI:
  • 1/2 Cup mayonnaise
  • 3 ounces cream cheese, softened
  • 1/4 Cup fresh chopped basil
  • 1 tablespoon Thai spicy & sweet chili sauce
  • 1 tablespoon minced garlic
  • 1 teaspoon Sriracha seasoning
  • HONEY GLAZE:
  • 1/3 Cup butter, melted
  • 1/4 Cup honey
  • 2 tablespoons soy sauce
  • 1 teaspoon garlic powder
  • 1/2 Teaspoons crushed red pepper
  • 1/2 teaspoon ginger powder
  • BULGOGI PATTIES:
  • 2 Pounds grass fed ground beef
  • 1/4 Cup grated Asian Pear
  • 2 tablespoons fish sauce
  • 4
  • chopped green onion, green and white parts
  • 1 tablespoon sesame seeds
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 tablespoon sea salt
  • 1/2 tablespoon freshly ground black pepper
  • MISC. INGREDIENTS:
  • 6 multi grain ciabatta buns, split
  • 1/2 Cup chopped cilantro

Instructions

  • Preheat a gas grill to 400 degrees F.
  • For the Bacon-Mushroom Jam, fry the bacon in a heavy skillet on medium until almost crisp. Add the mushrooms and onion and cook for 4 minutes. Add remaining ingredients and cook until thickened, about 30 minutes.
  • To make the Quick Pickles, place all ingredients into a gallon resealable bag and close, forcing the air out, and turn several times to mix. Chill.
  • For the Aioli, mix all ingredients in a small bowl and chill.
  • To make the Burger Patties, mix ingredients in a bowl and gently mix, then form into 6 equal portions and shape into patties. Oil the grill grates, turn on all burners and heat to high and place patties on grill. Baste the top of the patties with the Honey Glaze and close grill cover and grill 4 minutes, flip, baste again, and grill for another 3 minutes. Remove to a work surface, baste again and cover with a foil tent.
  • For the buns, lightly toast the cut side of the buns on the grill.
  • Meanwhile, Drain the Quick Pickles. To assemble, spread Aioli on the bottom buns and then place a Pattie. Top with Bacon-Mushroom Jam, Quick Pickles and Cilantro. Close with the top bun and serve.
