2 fresh limes
1 fresh lemon
1 small orange
1 teaspoon cumin
3 cloves fresh garlic
1 tablespoon extra virgin olive oil
16 ounces ground chuck
8 oz ground pork
1/2 cup vidalia onion
1 cup jicama
1/2 lime
1/2 cup mayonnaise
3/4 cup sour cream
3 tablespoons fresh cilantro
1 chipoltle pepper
kaiser rolls



For the Marinade Juice 2 limes, 2 lemons, 1 small orange. In a glass bowl combine juices and 1 tablespoon cumin, 3 crushed fresh garlic cloves, and 1 tablespoon extra virgin olive oil. For The Burgers Finely chop 1/2 cup vidalia onions. Mix together with 16 ounces ground chuck, 8 ounces ground pork. Form into patties. Put the marinade in an 8 X 10 glass baking pan. Set the patties into the marinade and turn once to coat. Let marinade for 1/2 hour refrigerated. Remove from marinade. For Sauce 1 cup finely chopped jicama 1/2 fresh lime juiced 1/2 cup mayonnaise 3/4 cup sour cream 3 tablespoons finely chopped cilantro 1 finely chopped chipoltle pepper Stir all together. Grill burgers on a medium high flame for 6 minutes per side. Serve on toasted kaiser buns with sauce.
