Patties:
2 lbs ground chuck
1 med onion, minced
2 tablespoons seasoning mix
Olive oil for grill
2 teaspoons seasoning mix
6 Italian rolls, split
6 very thin slices Havarti cheese

Instructions

To prepare the seasoning mix, combine garlic powder, salt, garam masala, cumin, cinnamon, and ground black pepper in small bowl. Stir with spoon until combined. To prepare the topping, mash avocados and place in medium mixing bowl. Add mayonnaise, lime juice, garlic powder, horseradish, salt, and ground black pepper. Cut red bell pepper in half and remove seeds and veins; finely mince and add to mayonnaise mixture. Stir thoroughly to incorporate all ingredients. Cover and refrigerate until serving. Preheat one side of grill to HIGH and the other side to MEDIUM. To make patties, place ground chuck in large mixing bowl. Peel and finely mince onion, and add to bowl. Add 2 tablespoons seasoning mix and, taking care not to compact the meat, gently mix until onion and seasoning are thoroughly distributed. Divide meat mixture into 6 portions; gently form each portion into a patty sized to fit the roll. Brush HIGH side of grill with olive oil and grill patties for 1 minute. Turn and grill an additional 1 minute. Brush MEDIUM side of grill with oil. Move patties to MEDIUM side of grill and sprinkle 1 teaspoon seasoning mix onto the 6 patties. Grill for 3 minutes and turn patties over; sprinkle remaining 1 teaspoon of seasoning mix onto patties and grill for additional 2 minutes. In the last minute of cooking, place rolls, cut side down on HIGH side of grill for 1 minute and place one piece of the thinly-sliced Havarti on each patty to melt. After 1 minute, transfer toasted rolls to serving platter; remove patties from grill and place on separate platter. To assemble the burgers, remove avocado-horseradish mayo from refrigerator and spread generous amount on cut sides of the rolls. Place patties on roll bottoms, add the roll tops and serve.
