Pairs well with:

Gewurztraminer

Hard to pronounce yet easy to drink, this wine combines lychee fruit and white peach flavors with a hint of spice.

3 scallions finely chopped
2 Serrano peppers, de-seeded and finely chopped
1 Tbsp. chopped fresh cilantro
1/4 cup peeled and finely diced seedless cucumber
1 1/2 lbs. ground lamb
1 cup chopped onion
1 egg
1 tsp. curry powder
2 tsp. ground coriander
1/2 cup bread crumbs
salt

To make Burgers: Combine lamb, other chopped Serrano pepper, onion, egg, curry powder, ground coriander, ginger, and bread crumbs in a bowl. Mix together with your hands and divide into 6 patties approximately 3/4 inch thick. Lightly salt each burger. Medium 160 degrees or medium well 170 degrees. Place burgers on buns, top with 2 Tbsp. Raita sauce each.
