Inspiration Delight Burger

Ingredients

Topping:
2/3 Cup Chopped pineapple
2/3 Cup Diced tomatoes
1 tablespoon soy sauce
1/4 Cup Chardonnay
1 teaspoon sea salt
2 tablespoons Extra Virgin Olive Oil
Spread:
½ cup ketchup
1 cup mayonnaise
1 Tablespoon Dijon Mustard
1 tablespoons Extra Virgin Olive Oil
1 teaspoon sea salt
vegetable oil or non stick cooking spray
Patties:
2 Pounds freshly ground sirloin or round
½ Cup diced roasted red peppers
½ cup fresh diced red onion
½ cup diced pickled beet
1 teaspoon sea salt
1 teaspoon black pepper
2 table spoons Extra Virgin Olive Oil
1 table spoon soy sauce
6 slices Monterey Jack Cheese
6 Kaiser Rolls split
3 ripe avocados mashed
3 cups shredded romaine lettuce

 

Instructions

Combine pineapple, tomatoes, soy sauce, Chardonnay, sea salt and Extra Virgin Olive Oil in a bowl. Refrigerate until serving. Combine ketchup, mayonnaise, mustard, Extra Virgin Olive Oil and sea salt in a bowl. Refrigerate until serving. Brush grill with vegetable oil or use a non stick cooking spray (Pam for BBQ) before starting preheat. Prepare a medium-hot fire in a charcoal grill or preheat a gas grill to medium-high. To make the patties, combine the beef, red peppers, red onion, beets, sea salt, black pepper, Extra Virgin Olive Oil and soy sauce in a large bowl. Do not over mix as it will toughen the beef. Form patties into six equal portions and form them into ¾ inch uniform thickness and slightly larger than your Kaiser rolls. Place the patties on the grill and grill until browned on the bottoms, approximately 5 – 7 minutes. Turn the patties and continue grilling until done to preference, about 5 minutes for medium, longer for a more well done burger. During the last few minutes of cooking, top each patty with cheese and brush the cut side of the rolls with Extra Virgin Olive Oil and place the rolls, cut side down on the grill to toast lightly. Assembly Instructions: To assemble the burgers, put spread on each side of the cut roll and spread mashed avocado on each toasted side of the Kaiser roll. On the top of the portion of the Kaiser roll, spread romaine lettuce. Place the burger on the bottom roll, and garnish with a generous amount of topping.
