Island Burgers

Ingredients

Burger ingredients:
2 lbs. ground turkey
1 egg, slightly beaten
1 T freshly grated ginger
1 clove of garlic, finely minced
juice of one lime
1 tsp. brown sugar
1/2 tsp ancho chili powder
1/2 tsp cayenne
1/2 tsp cumin
1/4 tsp paprika
1/4 tsp allspice
1/4 tsp lemon pepper
1/4 tsp nutmeg
6 fresh pineapple slices, approx 1/2 inch thick

Mango Slaw ingredients:
1 medium mango, diced
3 cups pre-packaged cabbage mix
1/4 cup cilantro, chopped
2 T soy sauce
1 1/2 T brown sugar
2 tsp fresh orange juice
1 T apple cider vinegar
2 T rice wine vinegar
1 T sesame oil
2 T canola oil
1/4 tsp dehydrated onion
1/4 tsp granulated garlic
1/2 tsp ground ginger
2 T toasted sesame seeds

Instructions

Prepare a grill to medium hot heat.

For burgers: Gently combine turkey, egg, ginger, garlic, and lime juice. In a separate small mixing bowl, combine burger spices, then add and gently mix to meat mixture. Form six burger patties and set aside.

Oil grill with vegetable oil. Place pineapple slices on grill and grill for four minutes on each side, until slightly charred. Remove from grill and set aside. Re-oil grill, if necessary, and place burgers on grill, turning once approximately six minutes on each side or until cooked through.

Meanwhile, in a large bowl, combine mango, cabbage mix and cilantro. In a small bowl, combine remaining dressing ingredients and toss with cabbage, mango and cilantro mixture.

During the last few minutes of burger cooking, carefully place the rolls, cut side down, on the outer edges of the rack to toast lightly.

Assemble burgers on bun with slaw for a topping.
