Island Oasis Shrimp Burger

Mango Salsa:
1 small mango diced
1 large tomato diced
1/3 cup chopped red onion
1/4 minced fresh cilantro
1 small jalapeno diced
1 avocado diced
2 1/2 Tbs lime juice
2 lbs fresh shrimp diced
1/2 cup sour cream
2 Tbs teriyaki sauce
2 eggs
2 cups panco bread crumbs
2 tsp minced fresh parsley
1 Tbs crab boil
pepper to taste
6 bun size focaccia bread sections, sliced horizontally and lightly toasted on grill



You'll need to make the mango salsa an hour in advance to allow the flavors to marry together. Combine all ingredients in a medium bowl except store in the fridge or cooler. Preheat gas grill to medium-high. To make the patties combine shrimp, eggs, sour cream, teriyaki, panco bread crumbs, parsley, crab boil, and black pepper. Mix by hand in large bowl and form into 6 equal size patties. Brush the grill rack with oil and grill patties until the shrimp turns whitish pink, approx 3 minutes on each side. To assemble place a shrimp patty on each bottom of lightly toasted focaccia, top with a generous spoonfull of the mango salsa mixture and cover with the top focaccia sections. Serves 6. Enjoy!!!
