Island Pulehu Burger With Red Blend-Glazed Pineapple And Garlic Fried Spinach

Ingredients

  • 1 tablespoon vegetable oil for grill grates
  • Spicy Mayo Sauce:
  • 1/3 Cup mayonnaise
  • 1 tablespoon barbecue sauce
  • 1 teaspoon spicy brown mustard
  • Red Blend-Glazed Pineapple:
  • 1/4 Cup Sutter Home Red Blend
  • 1/4 Cup teriyaki sauce
  • 1/4 Cup pineapple juice
  • 2 tablespoons brown sugar
  • 2 tablespoons minced purple onion
  • 2 Teaspoons grated fresh ginger
  • 2 Teaspoons minced garlic
  • 1/4 teaspoon hot sauce
  • 6
  • (about 1/3-inch thick) fresh pineapple slices (core removed)
  • Garlic Fried Spinach:
  • 1/3 Cup olive oil
  • 9 Cups loosely packed fresh spinach
  • 2 tablespoons minced garlic
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • Onions:
  • 6 thin slices from a large purple onion
  • Burger Patties:
  • 2 Pounds ground chuck
  • 2 Teaspoons Hawaiian seasoning
  • Other:
  • 6 slices mild cheddar cheese
  • 6
  • kaiser buns, split

Instructions

  • Heat a gas or charcoal grill to medium high heat. Oil grill grates with vegetable oil. Stir Spicy Mayo Sauce ingredients together in a small bowl.
  • Set aside. For Red Blend-Glazed Pineapple, combine Red Blend, teriyaki sauce, pineapple juice, brown sugar, onion, ginger, garlic and hot sauce.
  • Bring to a boil over medium high heat.
  • Cook for 5 minutes, stirring often.
  • Remove from heat.
  • Use 1/3 of mixture to brush on both sides of pineapple slices. Cover and grill pineapple slices for 3-4 minutes per side or until grill marks appear, turning once with a spatula.
  • Remove to a platter.
  • While pineapple is grilling, place onion slices on grill and brush 1 tablespoon of remaining mixture to brush on top of onion slices. (Reserve remaining mixture for patties.) Cover and grill for 3-4 minutes per side or until grill marks appear, turning once with a spatula.
  • Remove to platter with pineapple slices.
  • Meanwhile, for Garlic Fried Spinach, in a large skillet, heat oil over medium heat. Add spinach and cook for 3 minutes, stirring often.
  • Add garlic. Sprinkle with salt and pepper.
  • Cook for 2 more minutes, stirring constantly. Place a colander on a pie plate and pour spinach mixture in colander. Set aside. Reserve oil in pie plate for buns. For patties, divide and shape ground chuck into six patties slightly larger than buns. Sprinkle both sides of patties evenly with Hawaiian seasoning.
  • Place on grill.
  • Brush tops of patties with reserved mixture.
  • Cover and grill for 3-4 minutes.
  • Turn patties over and brush again with mixture.
  • Cover and grill for 3-4 minutes more for medium or to desired doneness, placing a slice of cheese on each patty during last minute of grilling time. Brush split side of buns with reserved oil from Garlic Fried Spinach.
  • Place on grill, split side down, on edge of grill for 1 minute or until grill marks appear.
  • To assemble burgers, spread split side of buns with Spicy Mayo Sauce.
  • Add a cheese-topped patty to each bun bottom.
  • Divide Garlic Fried Spinach onto each then add a glazed onion slice and a glazed pineapple slice to each. Add bun tops.
  • Serves 6.
