Burger patty:
1 lb italian sausage (mild or hot-hot is really good)
1/8 tsp ground fennel
1/2 cup fine diced white onion
one large clove garlic minced
1 tbl worcestershire sauce
1 tbl grey poupon dijon mustard
pinch salt and pepper
4oz green and red peppers large julienne
40z yellow onion large jullienne
1oz extra virgin olive oil
Salt and pepper TT
8 slices of good provolone cheese.
Roasted tomato aioli-
2 cloves garlic
1/2 cup roasted tomatoes
1/3 cup mayo
2 tbl olive oil salt and pepper TT
Marinara- I use my homemade but store bought with be sufficient. Fresh from the baker good Chicago style kaiser rolls



1. remove sausage from casings and mix in fennel, onion, garlic, worctershire, dijion, salt and pepper. incorporate well. 2. mix your aioli sauce- in a processor add garlic, pulse, add tomatoes,mayo and blend slowly drizzling in olive oil. then ass salt and pepper to taste. 3. place burger on grill. 4. while burger is cooking saute your peppers and onions in the onlive oil. 5. split buns in half bursh with olive oil and grill for a min or two. 6. flip burger, and heat marinara. 7. place 2 slices of propvolone on top of burger and melt, remove from heat. 8. bottom bun gets 1 tbl, marinara and top bun gets 1 tbl of roasted tomato aioli. Place burger on top of marinara and place 1oz of sauteed peppers and 1oz of onion on top of cheese, then place top bun with aioli on and dig in.
