Ingredients

Tomato Salad
4 Large Beefsteak Tomatoes
3 Jalapenos approx. 3 inches & green
5 Garlic Cloves, large
2 Tablespoons Extra Virgin Olive Oil
3 Teaspoons Kosher Salt
8 Grinds of Coarse Black Pepper Burger
1 1/2 Lbs. Ground Chuck
2 Teaspoons Kosher Salt
8 Grinds of Coarse Black Pepper Cheese
1/2 lbs. Imported Provolone Cheese
Buns
6 Soft Kaiser Style Buns
1/2 Stick Salted Melted Butter, for brushing

 

Instructions

Making Tomato Salad Cut stems from fresh Tomatoes and cut tomatoes in half, remove centers from tomatoes and discard with liquids. Chop tomato into a 1/4 inch dice, move to mixing bowl. Chop entire Jalapeno including seeds and membranes into 1/4 inch dice and transfer to same mixing bowl. Mince garlic cloves and add them to the mixing bowl. Add 2 tbls. extra virgin olive oil, 3 teaspoons of kosher salt, 8 grinds of coarse black pepper and stir. Allow salad to sit for 15 minutes, stir again and allow to sit for 15 minutes more. Salad is now ready to be stuffed. At this point prep grill with charcoal briquettes and light. Try to acheive a grill surface temperature that is hot enough to sear the burger and cook it in 4 minutes of cooking per side. If you place your hand 1 inch over cooking grill surface, you will have to move your hand in 1 1/2 seconds, then the grill is hot enough to start cooking. Burger Gently mix together 1 1/2 lbs. ground chuck burger, 2 teaspoons of Kosher salt and 8 grinds of course black pepper. Measure a 1/4 lb. of the burger and divide in 2 halves. Flatten the first half using your hands and add a 1 ounce portion of the tomato salad to the middle of the burger. Set the 2nd half of the burger on top of the tomato salad and seal the edges with your fingers or a fork. The goal is to not allow any tomato salad to escape during cooking, service or eating. Continue this previous process until 6 burgers are created. Place on grill, cook burgers approx. 4 minutes per side, absolutely do not press on the burgers with a spatula at any time. Buns Slice buns in half and brush each liberally with melted butter and place buns on grill, remove buns when a toasty brown color is acheived, about 2 minutes. Cheese Grate Provolone cheese and wait until 30 seconds of cooking time remain, then place slightly more than 1 ounce of grated cheese on each burger and allow cheese to melt. Assembly Place 1 burger on each bun and enjoy!
