Italian Pepper & Onion Burgers
1 1/2 lb ground sirloin
2 packages dry Italian dressing mix (.7 oz each)
3/4 cup onion (1/4 cup very finely diced, 1/2 cup sliced)
3/4 cup red bell pepper (1/4 cup very finely diced, 1/2 cup sliced)
3/4 cup yellow bell pepper (1/4 cup very finely diced, 1/2 cup sliced
1/4 cup sliced banana pepper
2 tbsp olive oil
4 tbsp balsamic vinegar (divided)
6 tbsp red wine (divided)
1/2 tsp salt
6 slices sharp cheddar cheese
6 sourdough rolls
In large bowl, combine ground sirloin, italian dressing mix, 1/4 cup finely diced onion, 1/4 cup finely diced red pepper, 1/4 cup finely diced yellow pepper, 2 tbsp balsamic vinegar and 2 tbsp red wine. Form into 6 equal patties.
Place on grill heated to medium and cook to desired doneness, flipping once. Approx 6 minutes for medium.
In grill safe pan, heat olive oil. Add sliced onion, sliced red pepper, sliced yellow pepper, banana peppers & remaining balsamic vinegar, red wine and salt. Sautee vegetables until soft.
Place burgers on sourdough buns. Top with a slice of sharp cheddar, and an equal amount of sauteed vegetables.
