Italian Stallion Burger w/Peperonata Topping

1.5 pounds of ground beef(20% fat)
2 cups of fine chop portobello mushrooms
1/3 cup of sweet paprika
1 teaspoon crushed hot red peper flakes
2 teaspoons of sea salt
1 tablespoon crushed fennel seeds
1/2 cup SutterHome merlot wine
1/4 cup olive oil
2 cloves garlic crushed
1 sweet onion sliced thin
1 red bell pepper seeded
1 yellow bell pepper seeded
1 green bell pepper seeded
1 28 oz. can plum tomatoes
1 tablespoon balsamic vinegar
1 teaspoon sea salt
6 Focaccia buns
12 slices provalone cheese



pre heat grill med. heat put all burger ingredients in large mixing bowl and mix 6 large burgers. Do not over mix. Use grill safe skillet and place on grill. Add 1/4 cup olive oil,crushed garlic and onions in skillet, cook 3 min. Add red,yellow and green pepper to skillet. Brown and allow mixture to carmalize for 10 – 15 min. Add Tomates,sea salt,balsamic vinegar,cook down tomates 5 more min. Take skillet off grill to cool. Place burger on grill and cook 4 min./side. When cooked top w/ 2 provalone slices and melt. Remove burger and place focaccia buns on grill to slightly toast. Assemble burgers by placing a spoonful of Peppernota on top of each burger and Mangia,Mangia,Mangia!!!
