Italian Tony’s, Burger Parmesan

This rich red easily complements your homemade chicken dishes, red meats, game, and mildly seasoned pastas.

Ingredients

Sauce:
2 tablespoons extra-virgin olive oil
2 large shallots (minced)
4 large cloves of garlic (pressed)
1/4 cup Sutter Home Caberet-Suavignon
1/2 teaspoon garlic powder
1/2 teaspoon salt
1 teaspoon black cracked black pepper
1 28 ounce can of San Marzano crushed tomatoes

Patties:
2 pounds freshly ground chuck
2 cups Italian Style bread crumbs (preferably Progresso)
2 large grade A eggs
1/4 cup of fresh parsley (chopped fine)
9 cloves of garlic (minced)
1 cup of freshly grated Parmesan cheese
1/2 teaspoon of salt
1 teaspoon of cracked black pepper
3/4 cup of water
2 tablespoons vegetable oil for brushing on grill
6 slices of fresh Mozarella
6 keiser rolls, sliced horizontally

 

Instructions

To make the sauce, prepare a medium-hot fire in a charcoal grill, with cover, or pre-heat a gas grill to meduim high.
Place a non-reactive, fireproof, sauce pan on grill rack and add olive oil, shallots and garlic. Let them cook together about 5 minutes, until slightly translucent. Add
Sutter Home Cabernet-Sauvignaun and bring to an easy boil, reduce heat to low and simmer, uncovered until it reduces just slightly (enough to burn off alchohol). Add the San Marzano crushed tomatoes and all the other ingredients and continue to simmer on medium, low flame for 20 minutes. Transfer to bowl and allow to cool down before using.

To make patties:

Combine the ground chuck, breadcrumbs, eggs, parsley, chopped garlilc, parmesan cheese, salt, pepper and water, in a large bowl. Handling he meat as little as possible, combine all together well. Form into 6 equal portions and shape the portions into patties the same size as the buns.

When the grill is hot, brush the grill with vegetable oil, and place the patties on the rack, cover, and cook , turning only once, 5-7 minutes on each side or until internal terperature reaches 160 F. One minute before removing the patties from the grill, top with mozzarella slices and place the Keizer rolls, cut side down on the grill to lightly toast.

To build the burgers, spread the sauce on the cut sides of each Keiser roll. Place the patties on the bottom pieces and cover with top.
