Jalapeno and Green Olive Burger with Tangy Tabasco and Dijon Mayonnaise

Ingredients

Tangy hot sauce and Dijon Mayonnaise:
1 cup of mayonnaise
4 tablespoons Grey Poupon Dijon Mustard
2 teaspoons Worcestershire Sauce
4 teaspoons Hot Pepper Sauce
1 teaspoon lemon juice
1 garlic clove, minced
1/4 teaspoon salt
1 teaspoon fresh black pepper
Patties:
2 pounds 15% lean ground beef
2 tablespoons Sutter Home Cabernet Sauvignon
14 green olives with pimiento, minced
12 slices of jarred Nacho Jalapenos, minced
6 garlic cloves, minced
1 tablespoon crazy salt
1 tablespoon Steak Seasoning
1 tablespoon fresh ground pepper
Vegetable oil, for brushing the grill rack
6 slices of Swiss cheese
6 nine grain hamburger buns, split
2 tablespoons soft butter
6 romaine lettuce leaves
6 (1/4-inch-thick) large tomato slices
6 paper-thin red onion slices, seperated into rings

 

Instructions

To make the mayonnaise, combine in a small bowl, mayonnaise, Dijon mustard, Worcestershire sauce, hot sauce, lemon, garlic, salt and pepper. Mix well, cover and refrigerate. Prepare a fire in a charcoal grill at low heat with a cover, or preheat a gas grill to 170 degrees or at a low heat. To make patties, combine in a large bowl, ground beef, wine, olives, jalapenos, garlic, crazy salt, Steak Seasoning and pepper. Handling the meat as little as possible to avoid compacting it, mix well. Divide mixture into six equal parts and form the portions into patties to fit the buns. When grill is ready, brush grill with vegetable oil. Place the patties on grill and cover. Grill patties 12 minutes on each side, turning only once. During the last minute of cooking, shut off grill and top each patty with one cheese slice. Spread the cut sides of buns with butter, placing cut side down on the outer edges of the rack to slightly toast or warm. To assemble the burgers, spread mayonnaise over the cut sides of the buns. On each bun bottom, place a lettuce leaf, a patty, a tomato slice, and a onion slice. Add the bun tops and serve. Makes 6 large burgers
