Jalapeno Pineapple Burger

Ingredients

  • Jalapeno Buns:
  • 3 Tablespoons warm milk
  • 2 Teaspoons active dry yeast
  • 2 1/2 Tablespoons sugar
  • 2 Large eggs
  • 3 Cups bread flour
  • 1/2 Cup all-purpose flour (plus more for dusting)
  • 1 1/2 Teaspoons salt
  • 2 1/2 Tablespoons unsalted butter, softened
  • 4 Jalapenos, chopped with seeds removed Roasted Pineapple:
  • 1 Whole pineapple, sliced
  • 1/4 Cup melted butter
  • 1/4 Cup brown sugar
  • 1 Tablespoon harissa seasoning Caramelized Onions:
  • 3 Medium sweet onions, sliced
  • 2 Tablespoons butter
  • 2 Tablespoons canola oil Burgers:
  • 1 1/2 Pounds of ground beef
  • 2-4 Slices Havarti cheese
  • 4 Pieces green leaf lettuce
  • Favorite burger seasoning
  • Mayo, if desired

Instructions

  • Jalapeno Buns: 1. In a glass measuring cup, combine 1 cup warm water, the milk, yeast and sugar 2. Let stand until foamy, about 5 minutes 3. Meanwhile, beat 1 egg 4. In a large bowl, whisk flours with salt 5. Add butter and rub into flour between your fingers, making crumbs 6. Using a dough scraper, stir in yeast mixture and beaten egg until a dough forms 7. Add chopped jalapenos to dough and gently mix to combine 8. Scrape dough onto clean, un-floured counter and knead, scooping dough up, slapping it on counter and turning it, until smooth and elastic, 8 to 10 minutes 9. Shape dough into a ball and return it to bowl 10. Cover bowl with plastic wrap and let rise in a warm place until doubled in bulk, 1 to 2 hours 11. Line a baking sheet with parchment paper 12. Using dough scraper, divide dough into 8 equal parts 13. Gently roll each into a ball and arrange 2 to 3-inches apart on baking sheet 14. Cover loosely with a clean kitchen towel and let buns rise in a warm place for 1 to 2 hours 15. Set a large shallow pan of water on oven floor 16. Preheat oven to 400 degrees with rack in center 17. Beat remaining egg with 1 tablespoon water and brush some on top of buns 18. Bake, turning sheet halfway through baking, until tops are golden brown, about 15 minutes 19. Transfer to a rack to cool completely Roasted Pineapple: 20. Preheat oven to 425 degrees Fahrenheit 21. Mix butter, brown sugar, and harissa in medium bowl 22. Add sliced pineapple to bowl and mix until fully combined 23. Add pineapple to a silpat or parchment paper lined sheet pan and drizzle remaining butter-harissa mixture over pineapple 24. Roast in oven for 25 to 30 minutes until browned, flipping about halfway through 25. Remove from oven and set aside Caramelized Onions: 26. Add butter and oil to pan and melt slightly 27. Add onions and cook down, stirring every few minutes over medium heat for about 30- 45 minutes until desired doneness 28. Remove from pan and set aside Burgers: 29. Grill or cook burgers using desired method, inside in cast iron or on the grill outside 30. Cook until internal temperature reaches 145 degrees Fahrenheit or desired doneness 31. Add cheese to burger while still in pan/on grill until it melts 32. Add mayo to jalapeno buns and then layer lettuce, burger, onions, pineapple and top bun 33.
