Jalapeno Veggie Burger with Chipotle Lime Cream

2 teaspoons jalapeno pepper diced
2 Tablespoons minced garlic
3 Tablespoons black olives diced
4 Tablespoons roasted red bell peppers drained diced
4 Tablespoon artichoke hearts drained and diced
3 Tablespoons banana peppers drained and diced
¼ cup finely chopped red onion
¾ cup black beans drained
1 cup white beans drained
1cup chickpeas drained

Dry mixture:
½ teaspoon ground sage
½ teaspoon red pepper flakes (optional)
¾ teaspoon ground cumin
¾ teaspoon celery salt
¾ teaspoon paprika
¾ teaspoon chili powder
1½ teaspoons dried oregano
1½ Tablespoons chopped parsley
4 Tablespoons seasoned bread crumbs
1 ½ cups rolled oats

2 eggs, slightly beaten
¼ cup extra virgin olive oil

4 cups Boston lettuce washed, dried, and torn into bite size pieces.

Chipotle lime Cream:
5 ounces cream cheese
1 ½ Tablespoons Miracle Whip salad dressing
1 ½ Tablespoons sour cream
1 ½ Tablespoon chopped cilantro
½ cup sun-dried tomatoes cut into slivers
¼ teaspoon chipotle chili powder (½ teaspoon if you like it hotter)
1 jalapeno pepper seeded and chopped finely
1 teaspoons fresh lime juice
Zest from 1 lime
Salt and fresh ground pepper to taste

6 Focaccia buns split



In a large mixing bowl combine all veggie mixture together; toss until blended, add all ingredients for dry mixture and eggs and mix until blended. Make 6 patties, cover and refrigerate for 30 minutes.

Meanwhile prepare the chipotle lime cream. In a small mixing bowl place; cream cheese, miracle whip, and sour cream, mix until well blended. Add remaining ingredients, stir until well blended, add salt and pepper to taste and set aside.

Heat oven on broil; place bread or buns on a baking sheet, flat side up, broil until golden brown.

* In a medium size skittle heat ¼ cup olive oil and cook patties 2 to 3 minutes per side.
Heat oven on broil; place buns on a baking sheet, flat side up, broil until golden brown.

Set buns on 6 plates; spread chipotle lime cream evenly on flat sides of buns; divide salad greens, place burger on and close sandwich.


* Directions for grilling:
Wipe grill with a vegetable oil and heat to medium. Grill patties 5 to 8 minutes or until done, turning once. When burgers are almost finished, Place bread or buns on grill, flat side down, just until a golden brown.
