Jamaican Me Make a Better Burger

Ingredients

Jamaican Me Build a Better Burger Ingredients:
Habanero, Curry, Pineapple Mojo
½ Scotch Bonnet or Habanero pepper, seeded and finely diced (about 1 teaspoon)
One lemon, rolled and cut in half, save remaining half for burgers
1 tablespoon chopped fresh cilantro
1 tablespoon fresh garlic, finely chopped
1 tablespoon Jamaican curry powder
2 teaspoons store bought crushed ginger
2 tablespoons canned, crushed pineapple (reserve 3 tablespoon of the juice for the burgers)
1 cup mayo
1 teaspoon salt, plus 2 tablespoons reserved for burgers
The Accompaniments
6 pieces Ibis or purple leaf lettuce, rinsed and dried
6 slices ripened green tomato
6 slices thinly sliced purple onion
The Burgers & Buns
2 pounds ground chuck
2 tablespoons reserved salt
Colavita extra virgin olive oil for the grill and rolls
6 Kaiser rolls, split

 

Instructions

Directions: Wearing gloves, seed and finely chop the Scotch bonnet or Habanero pepper, place in a medium bowl. Roll the lemon to loosen the juices and cut in half and rub over the carving board to clean. Wipe clean and dry. Next chop the cilantro and garlic, add to the bowl. Add the Jamaican curry powder, the crushed ginger, crushed pineapple, mayo and 1 teaspoon of the salt. Mix together until well blended. Chill until ready to finish the burgers. Preheat the grill to medium high heat. Wash and dry the Ibis or purple lettuce. Set aside on a tray. Slice the ripened green tomato and the purple onion. Place on the tray with the lettuce. In a large bowl, break up the ground chuck, sprinkle with the reserved salt, mix gently and divide into 6 burger patties. When the grill is at the right temperature, brush the grates with the Colavita extra virgin olive oil. Place the patties on the grill. Close the lid, but watch for flare ups. Cook the burgers for 4-5 minutes and then squeeze the reserved lemon and drizzle the pineapple juice over each burger and then flip and cook the other side. Brush the olive oil on the cut side of the Kaiser rolls and place them down on the grill. Close the lid. Wait for a minute and pull off the rolls and place one on each of six plates. On the bottom roll, place a piece of the purple lettuce on each. Top with the Habanero, Curry Pineapple Mojo. Pull the burgers off and place each on top of the lettuce-sauce mixture, top each with a slice of purple onion and a fresh green tomato. Place the top of the Kaiser roll against the burger and enjoy!
