Jerk Sirloin Burger with Mango-Lime Mayo & Drunken Onions

Ingredients

Burgers (For best results prepared a day ahead or several hours in advance)
2 pounds ground Sirloin
1/2 cup ground salt pork
1/4 cup Worcestershire Sauce
2 tablespoons Carib Beer
2 tablespoons Jerk Marinade
2 dashes of Cinnamon
1 teaspoon Kosher Salt
1/2 teaspoon cracked Pepper
Vegetable oil
Mango-Lime Mayo
1 medium ripe mango, peeled then sliced
1 clove garlic, skin removed
1 cup light Mayo
Juice from 1 lime
Fresh Cilantro
Drunken Onions
1 teaspoon Brown Sugar
2 tablespoon of dark Rum
Vegetable oil
1 large red onion, peeled & cut into rings
Condiments
1 large yellow tomato, sliced thick
Romaine Lettuce leaves, washed, dried and shredded

 

Instructions

Burger Directions To prepare burgers for grilling, in large bowl add the sirloin, pork, Worcestershire, beer, jerk marinade, cinnamon, salt & pepper. Gently combine ingredients together and divide into 6 equally shaped patties. Set aside. For better results burgers can be prepared in advance over 2-4 hours before grilling. Heat grill to medium high heat and cook burger to medium well when temperature is right, brush rack with oil. Mayo Directions Add the Mango, garlic, mayo, lime juice and cilantro to food processor. Pulse until all ingredients are mixed together but mango is still in small pieces. Set aside Drunk Onions In a medium bowl, add brown sugar, rum and oil, mix until oil blends with other ingreidents. Next add onions, and toss to coat. Building you Burgers Spread the top and bottom portions of your bread with the Mango-Lime mayo followed by, the lettuce, grilled burger, Drunken Onions, tomato and top portion of bread.
