3 lbs.ground beef (I prefer 80% lean)
1 egg
1 cup bread crumbs
2 tbls. ketchup
1tsp salt
1/2 tsp pepper
1/2 onion
1 pkg button mushroom
1 med.eggplant
1lb.mild cheddar cheese
1tsp italian seasoning
2tblsp. butter
4 tsps olive oil
3 cloves garlic



In a large bowl combine 1st 7 ingredients meanwhile dice garlic; slice eggplant andmushrooms thin also onion shred cheese saute mushrooms in 2tblsps. butter; addgarlic and onion until translucent and aromadic take rest of butter mix italian seasoning shape burgers into small bowl (approx.1/4 lb.)take mushroom mixture and some cheese spoon into middle of meat bowl form meat around mix. addto grill brush eggplant with olive oil add to grill cook burgers 3 to 4 min. per side eggplant 1min. per side put burger on kaiser roll top with eggplant slices serve
